Shahi paneer for your royal tastebuds

 

Preparation time: 10 minutes

Cooking time: 15 – 20 minutes

Serves: 4 people

What do you need?

2 tbs ghee/oil

1/2 tbs chili powder

1/2 tbs cumin powder

1/2 tbs garam masala

1/4 tbsp turmeric

Salt

1/2 tbsp Sugar (optional)

1/2 tbsp kasoori methi

2 large tomatoes

2 large onions

3-4 cloves of garlic

Few pieces of ginger

3/4 cup milk

250 gm paneer

Preparation:

Finely chop onions, garlic (or grind them).

Grind tomatoes into a smooth puree. Grind ginger along with tomato.

Cooking Method:

Take about 2 tbsp oil in a deep pan. Saute onion garlic into a paste till it turns brown. Add spices – chilli, garam masala, cumin powder, salt, turmeric and mix well with the onion paste. Then add the tomato puree to the mix. On medium flame, let the mix cook well until it becomes a homogeneous paste. 1/2 tbsp Sugar can be added (optional) to give it a slightly sweet tangy taste. Keep stirring and leave for few minutes on low flame for the paste to cook well, make sure it does not burn or stick to the pan.

Then add milk to the paste on medium flame, keep stirring and see the curry change to a more orange-yellow color. Add more milk depending on the thickness of curry needed. Keep stirring and let this cook on low-medium flame for few minutes to become a smooth homogeneous curry with no lumps. Little water can be added if thickness has to be reduced. Add kasoori methi, stir and cover the pan. Let this cook on low flame for few minutes. Add paneer cubes stir and let this sit for couple of minutes on low flame and then switch off the gas. Shahi paneer is ready to serve with hot chapattis
